I’ve been here a few times since it opened and with every visit the dishes continue to taste even more fantastic. Two of my favorites are the fishbone dumplings and THIC dessert. You should make a reservation for a table and get the full menu. But there are 4 seats at the bar (walk-in only) and you can sit there without a reservation. Order à la carte and wines by the glass. God fornøjelse!
Incredible fine dining experience at ESSE. We had high expectation for Matt Orlando, the former head chef at Noma, but Mr. Orlando and his team surpassed it at every level - the food, the wine, the ambiance, the service. We had the 12-course chef’s menu and each course complemented the next. There was such a balance and harmony to the meal that at the end, we felt extremely satisfied without the food coma experienced at other tasting menus. Also as a TCM doctor/acupuncturist and functional medicine practitioner, I applaud Matt Orlando’s commitment to circular gastronomy with WHOLE foods, local & seasonal ingredients, and fermentation techniques for a healthy microbiome. Dining at Esse, was not only the highest level gastronomic experience, but it also felt modern and healthy, as if Mr. Orlando is ahead of his peers in both educating his diners and also answering to what we want in fine dining now.
An incredible experience. The menu flows beautifully from start to finish, with every dish feeling intentional and well balanced. The rich, layered flavors stay with you long after the meal. Warm, attentive service and a relaxed atmosphere made our evening special. Modern Nordic cooking at a very high level and absolutely worth the visit.
Having missed Matt Orlandos Amass more than a bit, ESSE felt very familiar although having some new twists as well. Situated in an amazing space. Warm and friendly service. Incredible food and an interesting non alcoholic pairing. A complete experience.
It feels like time-traveling back to the good old days of AMASS. Fermented potato bread, fish bone noodles, and so many other exciting dishes! The atmosphere and people are wonderful, and the food is absolutely superb. I’ve missed the zero food waste concept in Copenhagen - so thrilled about this reincarnation 🙂
